A slow cooker converts collagen into gelatin. That is its entire job.

Which is why the same appliance produces fall-apart pot roast and inedible chicken breast. Tough, hard-working cuts are full of connective tissue, and eight hours turns it into something rich. Lean cuts have none, so the machine has nothing to do except remove their water. An air fryer runs the logic backwards: high heat, short time, brilliant at exactly the cuts a slow cooker ruins.

    Cooked here first. Not adapted from somewhere else and posted on faith. Actually made, start to finish, and photographed as made.
    Temperatures measured, not guessed. A pork loin pulled at 145°F and one pulled at 165°F are different dinners. Cook until done does not distinguish them.
    The failures get written down. The cut that dried out, the sauce that split, the skin that never crisped. Usually the most useful part of the post.
